Eating nutritious delicious foods after having a baby means you'll speed up your recovery, increase your energy levels and also help heal a Diastasis Recti (abdominal separation) which flattens your tummy.

Diastasis Recti, the technical term for an abdominal separation, is experienced by most women during pregnancy and after they have had a baby. The side effect of an abdominal separation is a 'jelly belly' or post pregnancy 'pooch' and it can also lead to back ache too. The tissue in the stomach and which covers the stomach muscle (the six pack) is stretched and weakened to cause this gap but help is at hand by eating foods that provide you with certain vitamins and nutrients to strengthen the tissue again to bring the muscles closer together. Result? A stronger, more functional core and a flatter tummy.

Vitamins C and E and Omega 3 good fats all play an important role in strengthening and healing the connective tissue in the stomach muscles. Oranges are a good source of vitamin C and walnuts and almonds both a good source of omega 3's and vitamin E. These foods will help to heal your connective tissue to flatten your tummy alongside the right kind of postpartum exercises.

This healthy cake is not only really delicious it contains all three of these foods, plus it is super easy so you do not need hours in the kitchen! It is a lovely snack to eat as part of your postnatal nutrition plan to help you recover, energise and flatten your tummy muscles faster.

Ingredients

2 unwaxed large oranges
250g ground almonds
100g chopped walnuts
3 large eggs, preferably free range
180g light honey
1 tsp of gluten free baking powder

To decorate

Whole orange cut in quarters
Natural greek yogurt

How to make

  1. Place the whole oranges, with skin on but washed, in a pan of cold water. The oranges should be covered. Bring to the boil, reduce the heat to low and simmer for 1 hour. Turn off the heat and remove the oranges from the water.
  2. Preheat oven to 170 degrees centigrade and grease and line with baking paper a medium sized loose bottomed cake tin.
  3. Place the whole oranges into a blender and pulse until smooth, which will make an orange puree. Add this orange puree to a mixing bowl with the eggs and honey, ground almonds and walnuts and slowly mix with a electric mixer until all ingredients are combined.
  4. Pour the mixture into the prepared cake tin, put in the oven and bake for 50 minutes or until the centre is cooked through (test with a skewer to see if it comes out clean). Remove from the oven and leave to cool.
  5. Turn out from the cake tin and slice. Serve with a spoonful of natural greek yogurt or creme fraiche and quarters of orange.
